Lucky me for having found some more great cookbooks for my collection. Sure hope you enjoy the following recipes as much as we have.

SWISS CHEESE DIP

  • ½-cup sour cream
  • ½-cup Swiss cheese, shredded
  • ¾-cup mayonnaise
  • ½ tsp. curry

Mix all ingredients and chill at least 3 hours or overnight. This is so good that you may want to double the recipe.
Serves 6 to 8.

MARINATED MUSHROOMS

  • 2 pounds whole, small mushrooms, cleaned
  • 1-2/3 cups olive oil
  • ¾-cup balsamic or red wine vinegar
  • ¾-cup parsley, finely chopped
  • 2 tbs sugar
  • 2-½ tsp Tarragon leaves, crushed
  • 1 tbs salt
  • 1 tbs black pepper, ground

Fill 16-oz jar with mushrooms. Place remaining ingredients in small bowl and whisk to combine.
Pour dressing into jar to cover mushrooms completely. Seal jar and marinate overnight at room temperature to blend flavors.
Store up to a week in the refrigerator. Bring to room temperature before serving.
Yield: 3 cups
