Southern Idaho, America’s french-fry basket, is good wholesome fun for those looking for more than a big baked tater with butter, chives and all the fixings.

Motoring on Highway 30 toward the popular vacation retreat of Lava Hot Springs, images of townsfolk soaking in steamy mineral water baths clouded my mind. Au contraire, I thought, as I drove down Main Street and encountered a group of happily determined kids in swimsuits carrying candy-colored inner tubes uphill. Turns out this mountainside haven is a natural aquatic playground for all ages.

Located alongside lava cliffs, sprinkled with ancient volcanic water vents, this town has made a splash with visitors since 1902 when the “healing waters” opened to the public. A quaint ‘lil museum and visitor center at 110 E. Main is chock full of history on the town.

Today you can still dip into a number of hot bubbling pools. But on this particularly blistering dog day of summer, I had my eyes set on the Portneuf River, a refreshing tree-lined stream that cuts briskly through the middle of town...
